How to prep and make this recipe

  1. Preheat the oven to 375 degrees F. Oil an 8”x8” baking dish (or similar size) and set it aside.

  2. In a bowl add the eggs, cottage cheese, parmesan, chives, salt, and pepper. Whisk until well combined and pour into the prepared baking dish.

  3. Bake for 20-25 minutes, or until the top is slightly golden and the egg mixture is puffed up in the center. The puff will fall as it cools.

  4. Allow the cottage cheese baked eggs to cool slightly before serving.

How to store leftovers

Once it has cooled fully to room temperature you can add it to an airtight storage container. It will keep well for 5-7 days. Reheat leftovers in the microwave or in the oven until warmed through.
