Browned Butter Sweet Potato Casserole: A Thanksgiving Showstopper

Ingredients
For the Casserole:

6 tbsp unsalted butter, divided

4 roasted sweet potatoes, flesh removed

¼ cup maple syrup

2 tsp vanilla extract

1 tsp cinnamon

½ tsp sea salt

For the Topping:

¾ cup rolled oats
-
¾ cup pecans, chopped
-
3 tbsp cane sugar
-
1 tbsp cinnamon
How to Make It
Step 1: Brown the Butter
Start by adding butter to a small pan over medium heat. Allow it to melt, and then whisk continuously as it begins to bubble and crackle. The butter will start to darken and release a nutty aroma. After 5-8 minutes, you’ll notice golden amber hues and dark flecks forming at the bottom of the pan. That’s your browned butter! Remove from heat and let it cool.
Step 2: Prepare the Sweet Potato Base
Preheat your oven to 350°F. Lightly grease a square baking dish.
In a large bowl, mash the roasted sweet potatoes until smooth. Add 2 tablespoons of the browned butter, along with the egg, maple syrup, vanilla, cinnamon, and sea salt. Mix until well combined, then pour the mixture into the prepared baking dish.
Step 3: Make the Topping
In a separate bowl, combine the oats, chopped pecans, cane sugar, and cinnamon. Stir in the remaining 4 tablespoons of browned butter until the mixture resembles a crumble. Spread the topping evenly over the sweet potato filling.
Step 4: Bake and Serve
Bake for 35-40 minutes, or until the topping is golden brown and crisp. Let the casserole cool slightly before serving.
