Leftover Turkey Breakfast Sandwiches
Thanksgiving leftovers are legendary, but why limit your leftover turkey to the classic cranberry sauce pairing? This protein-packed breakfast sandwich takes your leftover turkey to new heights. With a spinach and egg bake, cheddar cheese, and savory turkey nestled between toasted English muffins, it’s the ultimate post-holiday treat.
The best part? These sandwiches freeze well, making them a quick and hearty breakfast option for busy mornings. Let’s get started!
Ingredients
-
2 cups fresh spinach, chopped
-
½ tsp sea salt
-
¼ tsp pepper
-
6 English muffins, toasted
-
6 slices of cheddar cheese
-
Leftover turkey
How to Make It
Step 1: Prepare the Egg Bake
Preheat your oven to 350°F and lightly oil a rectangular baking dish.
In a large bowl, whisk together the eggs, chopped spinach, sea salt, and pepper. Pour the mixture into the prepared baking dish and bake for 25-30 minutes, or until the eggs are fully set.
Once cooled, use a wide-mouth mason jar ring or a round cookie cutter to cut out circular portions of the egg bake. These will be the perfect fit for your English muffins.
Step 2: Build the Sandwiches
Toast your English muffins to a golden brown.
On each bottom half, layer:
-
A round of the spinach and egg bake.
-
A slice of cheddar cheese.
-
A portion of leftover turkey.
-
Top with the other half of the English muffin.
Step 3: Serve or Store
For immediate enjoyment, wrap the sandwiches in foil and warm them in the oven until the cheese is melty.
To freeze, wrap each sandwich individually in foil or freezer-safe wrap and store them in an airtight container or freezer bag. They’ll keep well for up to 3 months. When ready to eat, simply heat in the oven or microwave until warm and enjoy!
